Upgrade your wedge salad with grilled skirt steak, its inexpensive and a perfect solution for week nights dinners.

Ingredients
  • 1 head of ICEBERG LETTUCE
  • 8 strips of CRISPY BACON
  • 1/2 cup of BLUE CHEESE crumbles
  • 1 cup of BLUE CHEESE DRESSING (see recipe)
  • 1 cup of CHERRY TOMATOES
  • ½ cup of sliced RED ONION
  • 4 SKIRT STEAKS
Directions
  • Step 1 Start by getting a pan or grill very hot and add some oil, season the steaks with salt and pepper, sear the steaks on each side.
  • Step 2 Let the steaks rest for a minute or two before you slice them for presentation, in the meantime get the iceberg lettuce cut the root out and discard it, then cut the lettuce in 8 equal parts.
  • Step 3 In a large plate place some grape tomatoes, 2 wedges of lettuce, add the steaks to the side of the lettuce, top with blue cheese crumbles, pour blue cheese dressing on top of the lettuce and tomatoes, garnish with bacon bits and red onion.
  • Step 4 Finish with freshly cracked black pepper.

TIPS:

  • Bacon takes a long time in the oven to crisp; you can make it in the microwave in about 3 minutes
  • The red onion could be optional, but if you use it make sure is thinly sliced, or just go ahead and replace it for scallions or chives
  • This salad is perfect for steak, but if you want something different you can use buffalo chicken tenders
  • Rare = Sear 1 min each side
  • Med Rare = Sear 2 min each side
  • Medium= Sear 4 min each side
  • Med well = Sear5 min each side
  • Well done = please don’t cook steaks, ever

The wedge salad is a perfect way to start your steak dinner, but what happens when you don’t have the time, budget or occasion to go on a fancy Steak House? YOU MAKE YOUR OWN!!

Here’s a recipe for a Steak wedge salad for any day of the week, and I use skirt steak, which gives me all the flavor at a very convenient price. Whenever you go to a fancy Steak house, you probably start the evening with a cocktail, then appetizer, moving onto a pre-entre salad (Caesar or Wedge), the main course is a thick cut steak (NY Strip, Prime Rib, Filet, Ribeye, etc.) and finishing with a decadent dessert, obviously you have wine all in between. Now, $350 dollars later (for 2 people) you see the check and reconsider your life. Just trying to figure out if it’ll be checking or credit card gives you indigestion.

Well, I have good news, here’s a recipe that you can make anytime you feel like having a steak dinner at home. You’ll save a ton of money and you’ll be satisfied until you get to go on one of those fancy dinners we love so much.
