Simple Tuna Salad Sandwich

INGREDIENTS:

  • 8 slices of WHITE BREAD
  • 2 cans of good quality TUNA, remove the water or oil
  • 1 cup of MAYONNAISE or GREEK YOGURT  (for a light version)
  • 1 CELERY stalk finely chopped  
  • half of a GREEN APPLE cut in small cubes
  • Half of a RED BELL PEPPER cut in small cubes
  • Half of a RED ONION cut in small cubes and then washed in cold water
  • 2 tablespoons of CHOPPED PARSLEY
  • Juice of 1 LEMON
  • 8 slices of TOMATO
  • 2 cups of FIELD GREENS  tossed in a little olive oil, salt and pepper

 

PREPARATION:

Grab a mixing bowl and place the  tuna, celery, green apple, red bell pepper, mayo or greek yogurt and lemon juice. Mix well and taste, add salt and pepper as needed, mix well again.

Toast the bread on a toaster or flat grill, then top it off with some field greens and then add two slices of tomato. With a large spoon grab a healthy portion of tuna salad and place it on top of the tomatoes, if you want seasoning the tomatoes with salt, pepper and olive oil before. Finally ad the other toasted piece of bread and close the sandwich.

 

TIPS:

  • Don’t toast the bread and cut the borders for a lighter version of sandwich
  • You can take the tuna salad in a container and use toast points instead of bread for a snack or quick lunch
  • Eat this sandwich as soon as you make it, not a good “to go” type of sandwich
  • French Roll or other “hard” breads are also good for this sandwich
