Nicoise Salad with housemade dressing is just something you should eat once a week when looking for something quick, healthy and filling.
- 4 RED POTATOES sliced
- 20 GREEN BEANS blanched
- 1 soft boiled EGG
- 1 BUTTER LETTUCE
- 2 cans of TUNA in water
- ½ cup BLACK OLIVES
- ½ cup NICOISE DRESSING
- Step 1 Start by slicing the potatoes thinly and keep them in cold water to prevent browning, then get a tray and apply some cooking spray or oil to the surface, place the potato slices in a form of a flower. Then, top the potatoes with some oil and salt, after that move them to an oven to cook them at 350◦F for 15-20 min.
- Step 2 In the meantime, blanch the green beans, this means dropping them in in boiling salt water for 45 seconds and then move them to an ice bath to chill, finally drain them well. Keep going by making the soft-boiled egg, you just have to drop an egg in boiling water for 5 min, make sure the yolk is not completely cooked.
- Step 3 To build the salad, grab a serving bowl and fil it with butter lettuce, then the green beans, the potato, black olives and tuna, top it all off with Niçoise dressing and garnish with the soft-boiled egg. Open the soft-boiled egg before serving, the running yolk complements the dressing very well, don’t forget to sprinkle salt and pepper.
