Endives are delicious and you should try them. Endive salad with housemade raspeberry vinaigrette is a winner dish for a healthy menu.
- 2 CHICORY ENDIVES
- ¼ cup BLUE CHEESE CRUMBLES
- 1 GREEN APPLE
- ½ cup WALNUTS
- ¼ cup DRY CRANBERRIES
- 1 cup RASPBERRY VINAIGRETTE
- Step 1 Start by cutting the bottom of the endives and pulling the leaves apart, place them in a mixing bowl and mix them with some olive oil and salt.
- Step 2 On a serving plate, pour some dressing on the side to decorate and place the endives on the other side. Top the endives with walnuts, cranberries and blue cheese crumbles. Finish with some dressing on top and a liltle olive oil, salt and pepper. Garnish the plate with some green apple.
